A layer of sweet, sharp raspberry jam (from our own raspberries, when we can) and white chocolate ganache.
These are frequently available in a vegan version, but our supply of vegan white chocolate is unpredictable.
When we can't get vegan white chocolate, there's a dairy element to the white chocolate, so we figured we may as well make the ganach with double cream in non-vegan weeks. Please always ask, before buying these - and we will tell you, too, if you're buying from the market.
